Description

Everything you love about burgers and baked potatoes in one bite! These twice-baked potatoes are loaded with beef, bacon, cheese, and flavor.


Ingredients

  • 4 large russet potatoes

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic

  • ½ tsp smoked paprika

  • ½ tsp salt + black pepper

  • 4 oz cream cheese

  • 1 cup cheddar or Colby Jack

  • ¼ cup sour cream

  • 4 slices bacon, cooked and chopped

  • 2 green onions

  • Optional toppings: pickles, mustard, ketchup, shredded lettuce


Instructions

  1. Preheat oven to 400°F. Bake scrubbed, oiled potatoes for 60 mins. Cool, slice, scoop flesh.

  2. Cook ground beef with onion, garlic, and spices.

  3. In a bowl, mix potato flesh, beef, cream cheese, sour cream, shredded cheese, bacon, and onions.

  4. Fill each shell with mixture. Top with extra cheese.

  5. Bake again at 375°F for 20 mins or until heated through.

  6. Garnish and serve hot!
