Everything you love about burgers and baked potatoes in one bite! These twice-baked potatoes are loaded with beef, bacon, cheese, and flavor.
Ingredients
4 large russet potatoes
1 lb ground beef
1 small onion, diced
2 cloves garlic
½ tsp smoked paprika
½ tsp salt + black pepper
4 oz cream cheese
1 cup cheddar or Colby Jack
¼ cup sour cream
4 slices bacon, cooked and chopped
2 green onions
Optional toppings: pickles, mustard, ketchup, shredded lettuce
Instructions
Preheat oven to 400°F. Bake scrubbed, oiled potatoes for 60 mins. Cool, slice, scoop flesh.
Cook ground beef with onion, garlic, and spices.
In a bowl, mix potato flesh, beef, cream cheese, sour cream, shredded cheese, bacon, and onions.
Fill each shell with mixture. Top with extra cheese.
Bake again at 375°F for 20 mins or until heated through.
Garnish and serve hot!
