Description
These baked oatmeal singles are cozy, spiced, and naturally sweet. A perfect grab-and-go breakfast made with juicy pears and warm chai flavor.
Ingredients
2 cups rolled oats
1 tsp baking powder
¼ tsp salt
1½ tsp cinnamon
½ tsp cardamom
¼ tsp ground ginger
⅛ tsp cloves
⅛ tsp nutmeg
1½ cups milk (dairy or plant-based)
2 eggs
⅓ cup maple syrup
2 tsp vanilla extract
2 tbsp melted coconut oil or butter
1½ cups diced ripe pear
Optional: ⅓ cup chopped walnuts or pecans
Instructions
Preheat oven to 350°F and grease a 12-cup muffin tin.
In a large bowl, whisk oats, baking powder, salt, and all spices.
In another bowl, mix milk, eggs, maple syrup, vanilla, and oil.
Combine wet and dry mixtures. Fold in pears and optional nuts.
Divide into muffin cups. Top with oats or turbinado sugar.
Bake for 25–30 minutes or until centers are set. Cool 5 minutes before serving.
Notes
Swap pears for apples or bananas
Use flax eggs for a vegan option
