Description

This cottage cheese banana bread is moist, fluffy, and protein-packed—perfect for a quick breakfast, healthy snack, or freezer-friendly treat.


Ingredients

  • 3 ripe bananas (medium-large)

  • ¾ cup cottage cheese (small curd)

  • 2 eggs

  • ⅓ cup maple syrup or honey

  • 1 tsp vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp ground cinnamon

  • ¼ tsp salt

  • Optional: ½ cup mini chocolate chips or chopped walnuts


Instructions

  • Preheat oven to 350°F and grease a loaf pan.

  • In a large bowl, mash the bananas. Stir in cottage cheese, eggs, syrup, and vanilla.

  • In another bowl, whisk together flour, baking soda, cinnamon, and salt.

  • Combine wet and dry ingredients gently—do not overmix.

  • Fold in chocolate chips or walnuts, if using.

  • Pour batter into prepared loaf pan and bake for 50–60 minutes.

 

  • Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Make muffins by dividing the batter into a lined muffin tin and baking 20–24 minutes.

  • Store in an airtight container at room temp for 3 days or freeze for up to 2 months.
