This cottage cheese banana bread is moist, fluffy, and protein-packed—perfect for a quick breakfast, healthy snack, or freezer-friendly treat.
Ingredients
3 ripe bananas (medium-large)
¾ cup cottage cheese (small curd)
2 eggs
⅓ cup maple syrup or honey
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp ground cinnamon
¼ tsp salt
Optional: ½ cup mini chocolate chips or chopped walnuts
Instructions
Preheat oven to 350°F and grease a loaf pan.
In a large bowl, mash the bananas. Stir in cottage cheese, eggs, syrup, and vanilla.
In another bowl, whisk together flour, baking soda, cinnamon, and salt.
Combine wet and dry ingredients gently—do not overmix.
Fold in chocolate chips or walnuts, if using.
Pour batter into prepared loaf pan and bake for 50–60 minutes.
Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Make muffins by dividing the batter into a lined muffin tin and baking 20–24 minutes.
Store in an airtight container at room temp for 3 days or freeze for up to 2 months.
Delicious with peanut butter, almond butter, or topped with Greek yogurt.
