Instructions

  • Preheat oven to 400°F. Butterfly and pound flank steak to ½-inch thick.

  • In a bowl, combine butter, garlic, Parmesan, herbs, salt, and pepper.

  • Spread filling over steak. Roll tightly and tie with butcher’s twine every 1.5 inches.

  • Slice into pinwheels. Sear both sides in hot skillet (2 minutes per side).

 

  • Transfer to oven and roast for 8–10 minutes. Let rest, then serve.
