This Peruvian Green Aji Sauce is a creamy, spicy, and herby condiment made with fresh cilantro, garlic, lime juice, and chili peppers. It’s quick to blend and perfect for dipping, drizzling, or spreading on everything from grilled meats to veggie bowls.
Ingredients
- 1 cup fresh cilantro (packed)
2 jalapeños or aji amarillo (seeded)
2 garlic cloves
2 tbsp lime juice
1/2 cup mayonnaise or Greek yogurt
2 tbsp olive oil
Salt to taste
- Optional: 2 tbsp grated Parmesan or Cotija cheese
Instructions
Add all ingredients to a blender or food processor.
Blend until completely smooth and creamy.
Taste and adjust salt or lime juice as needed.
Transfer to a jar and refrigerate for up to 7 days.
Shake or stir before each use.
