Description
This Slow Cooker Lasagna Soup is a cozy, cheesy, one-pot version of the classic Italian dish. Made with rich tomato broth, tender pasta, and melty cheese, it’s perfect for hands-off weeknight dinners or lazy weekend cooking.
Ingredients
1 lb ground beef or Italian sausage (or half of each)
1 small yellow onion, diced
3 cloves garlic, minced
1 (6 oz) can tomato paste
1 (28 oz) can crushed tomatoes
1 (15 oz) can tomato sauce
4 cups low-sodium beef or chicken broth
2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
8 lasagna noodles, broken into pieces
1/2 cup heavy cream (optional)
1 ½ cups shredded mozzarella
1/2 cup grated Parmesan
Ricotta cheese (for topping)
Fresh basil or parsley (for garnish)
Instructions
In a skillet, brown ground meat with onion over medium heat. Drain fat, then stir in garlic and cook 1 more minute.
Transfer meat to a slow cooker. Add tomato paste, crushed tomatoes, tomato sauce, broth, and all seasonings. Stir to combine.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
About 30 minutes before serving, stir in the broken lasagna noodles. Cook until tender.
Stir in heavy cream if using. Ladle into bowls and top with mozzarella, Parmesan, and a spoonful of ricotta. Garnish with fresh herbs if desired.
Notes
For freezer-friendly prep, leave out noodles and cream until reheating.
You can sub in ground turkey or add spinach during the last 10 minutes.
Adjust thickness by removing lid during final 20 minutes of cooking.
